Ingredients
1 can (15 oz) Washed and drained chickpeas
1 cup of cherry tomatoes, chopped
1 cup Cucumber, chopped
1/2 cup Minced red onion
1/2 cup minced bell pepper
1/4 cup fresh parsley, chopped
2 tbsp Fresh mint, chopped
1 tablespoon extra-virgin olive oil
2 tbsp lemon juice, freshly squeezed
1 tablespoon Honey
1 tablespoon Dijon mustard
Salt and pepper
Procedure
In a large mixing basin, add the chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, parsley, and mint.
In a small bowl, mix together the olive oil, lemon juice, honey, and Dijon mustard until thoroughly blended.
Toss the salad in the dressing to coat all of the ingredients.
To taste, season with salt and pepper.
Refrigerate for at least 30 minutes to allow the flavors to mingle.
Serve cool and enjoy your tasty chickpea and veggie salad!
