Grilled fish with sauteed veggies is a delicious and nutritious dish that mix soft and juicy grilled fish with a mixture of sauteed vegetable. This recipe contains lean protein and variety of vitamins, minerals, and fiber from the sautéed vegetables.

Ingredients
4 fillets of your chosen fish (such as salmon, tilapia, or cod)
Salt and Pepper
2 tbsp olive oil
2 garlic cloves, minced
1 Red pepper, chopped
1 Yellow pepper, Sliced
1 Zucchini, sliced
1 yellow squash, sliced
1 tablespoon Dried basil
1 tablespoon Dried oregano
1/4 teaspoon red pepper flakes (optional)
2 tbsp freshly squeezed lemon juice
1 tablespoon Chopped fresh parsley
Procedure
Preheat the grill to medium-high temperature.
Season the fish filets on both sides with salt and pepper.
1 tablespoon of olive oil should be brushed over the fish.
Grill the fish for 3-4 minutes per side, or until cooked through and flaky with a fork.
Set the fish aside after removing it from the grill.
Heat the remaining 1 tablespoon olive oil in a large skillet over medium-high heat.
Cook for 1 minute, or until the garlic is aromatic.
In the skillet, combine the bell peppers, zucchini, and yellow squash.
Season the vegetables with salt, pepper, dried basil, oregano, red pepper flakes (if using), and oregano.
Cook for 5-7 minutes, or until the vegetables are soft and gently browned.
Toss the veggies with the lemon juice and parsley in the skillet to coat.
