Ginger-garlic curry is a fragrant and savoury dish prevalent in Indian and Southeast Asian cuisines. It consists of ginger, garlic, and spices cooked in a curry sauce with vegetables,. It contains are vitamin B6, C, K, B-vitamins, and fiber.

Ingredients
2 onion, finely chopped
1 tomato, finely chopped
3 tablespoon garlic, finely chopped
2 tablespoon of ginger, finely chopped
½ -1 teaspoon of turmeric powder (Haldi)
1-1.5 tablespoon of mustard oil
1 cup of soya chunks (Nutrie) OR gatta (OPTIONAL)
3-5 finely chopped
1 teaspoon of cumin seeds (Jeera)
1-1.5 tablespoon of mustard oil
½ teaspoon of garam masala
1 cup water
salt as required
Procedure
Heat oil in the cauldron (Handa/Kadhai).
Add cumin seeds, let them crackle.
Add onion, ginger, garlic, and green chilli.
Fry till the colour turns light brown.
Then add tomato and mix well.
After a minute or two, add salt, turmeric, and garam masala to it.
Mix well.
Cook with occasional stirring, till the oil starts separating out.
Add soya chunks or gatta (if using).
Now add water and simmer the gas.
Allow it to boil for 4-5 minutes.
