Upma is a traditional breakfast dish in South India prepared with semolina (rava) or coarse rice flour. It's a tasty dish made with vegetables, spices, and occasionally nuts or lentils. Upma gives a hearty and fulfilling start to the day.

Ingredients

1 cup of suji
1 ½ tablespoon of ghee
1 teaspoon of whole black mustard seeds (Sarson/Rai)
1 small onion, chopped
¼ cup of carrots, boiled and diced
¼ cup of green peas, boiled
1 teaspoon of split black gram (Urad/Kali dal)
2 small green chillies, split lengthwise
10 curry leaves (Kadi patta)
1 teaspoon of sugar
Kosher salt
2 ¼ cup of water

Procedure

Cook suji over medium heat for about 2 minutes in a cast iron pan till it become toasty.
Transfer it to a bowl.
Heat ghee in the pan.
Add mustard seeds (sarson/rai) and split black grams (urad/kali dal) and stir until they splutter.
Add the onions and fry until slightly soft.
Then add chillies, curry leaves (Kadi patta) and stir for a minute until it become fragrant.
Now, add carrots, peas, and sugar.
Mix well.
Add toasted suji and stir vigorously for a minute.
Add salt.
Gently pour in the water.
Reduce heat and cook for 2 minutes, stirring constantly.
Turn off the gas when the mixture is slightly runny.
