Ingredients
1/2 cup of Barley khichadi
½ cup of onion, chopped finely
½ cup of tomato, finely chopped
1 cup of capsicum, chopped
½ cup of zucchini (Tori), chopped
3 tablespoon of coriander (Dhaniya), chopped
2 teaspoon of oil
1teaspoon of cumin seeds (Jeera)
½ teaspoon of green chillies, finely chopped
Procedure
Take 1 ½ cup water and barley in a pressure cooker.
Pressure cook for 2 whistles.
Heat oil in a pan, add cumin seeds.
When the seeds crackle, add onions.
Cook for 1-2 minutes.
Add tomato, mix well and cook for a minute.
Add the vegetables and cook on a medium flame for 2-3 minutes with occasional stirring.
Add barley, green chillies, and coriander (dhaniya).
Mix well, cook for 2-3 minutes on a medium flame with occasional stirring.
