Scrambled eggs are a traditional breakfast dish that is produced by whisking eggs and slowly heating them until they are light and fluffy. Scrambled eggs are high in protein, vitamins, and minerals. They provide a nutritious start to the day.

Ingredients
4 eggs
2 onions, finely chopped
2 tomatoes finely chopped
1 capsicum chopped
2 inch of ginger, finely chopped
½ cup of coriander leaves (Dhaniya)
2 tablespoon of vegetable oil or ghee
1 teaspoon of turmeric powder (Haldi)
3 green chilli, can vary as per taste
3-4 curry leaves (Kadi patta)
1 teaspoon of cumin seeds (Jeera)
1 tablespoon of Garam masala
A pinch of asafoetida (Hing)
Salt per taste
Procedure
In a large bowl, whisk the eggs using a spoon and keep aside.
Heat oil or ghee in a pan.
Add jeera, onion, hing, green chilli, curry leaves, capsicum and ginger.
Sauté for 3-4 minutes.
Add tomatoes and coriander leaves.
Sauté for 2 minutes.
Add garam masala, turmeric powder, and salt.
Mix well.
Pour beaten eggs in it.
Whisk until cook.
