Ingredients
1 tablespoon of canola oil
1 tablespoon of sesame oil (optional)
2 tablespoon of chopped white onion
1 cup of leftover, cooked white rice
3 oz of leftover, diced up cooked chicken
½ cup of the frozen vegetable mixture (peas, corn, diced carrots)
1 teaspoon of reduced-sodium soy sauce
1 tablespoon of water
Procedure
Sauté onion in the mix of canola and sesame oil.
Medium heat for 1-2 minutes or until soft.
Add frozen vegetables and cook until heated through.
Add leftover rice and chicken.
Stirring them into the mix until the rice is broken up.
Add reduced-sodium soy sauce, water, and stir.
Cook for another 2-3 minutes and serve.
