Ingredients

1 cup of yellow split moong dal/ golden lentil
1 cup of white urad dal
½ cup of split green gram dal/split green moong dal
½ cup of orange masoor dal/ red lentil

Procedure

Wash all dals thoroughly and soak them in enough water.
Let it stand for 4-5 hours or overnight.
Drain the water if in excess and grind the dal in small batches, say 2 cups at a time.
Grind well to form a smooth batter.
Add a tablespoon of water to aid grinding if necessary.
Let the batter stand for 15 minutes, and then it is ready for use.
Add salt just before making the dosas.
Heat a non-stick griddle and grease it lightly with oil.
Pour batter on in a circular motion.
Add a little amount of oil.
Cook on both sides till it becomes golden brown.
Serve with green chutney.
